Tasting notes: PEACH, CARAMEL, COCOA

 This is the second year in a row that we have had the chance to offer you this wonderful coffee from the MIRAMAR farm in El Salvador. This year, Mathias offered us to experiment a little by treating this special coffee just for us, a very pretty "Black Honey"

The "Black Honey" process consists of leaving practically all the flesh for the drying period. This method requires constant monitoring since the risks of over-fermentation are high.

In the case of MIRAMAR, this method has been masterfully executed by the Sauerbrey family.

 The story of Mathias and the Sauerbrey family...

Mathias is a young importer based in Toronto. It operates under the name "The Coffee Republic". His family has been in Canada since 2012, mainly because of the political and economic instability in the region where they lived. His grandparents are still there and they operate the family farm which has been active for over 100 years.

Having been immersed in the world of coffee since his childhood, Mathias has always had the idea of participating in the importation of green coffee into Canada, especially given his situation and his position with the family farm, both in terms of control of quality only on the logistical side of things.

In El Salvador, they say that when coffee disappears, people disappear. A bad harvest or a simple drop in coffee production often causes people to want to migrate north to the United States, which is terrible for the local economy.

If this country is now well developed, it is thanks to coffee. This led to the arrival of banks, airlines and various large industries which ensured that the working class had access to credit, loans and above all, work.

This period is called "The Coffee Republic", a republic built on coffee.

We are very grateful to be able to roast a coffee so strong in meaning, but also of very high quality. This is KOHI's raison d'être.
