Thanks to Sebastien Recinos and Anna Valdes of Balam Coffee Project, WilTor acquired this batch of carbonic maceration of red bourbon from Antonio Recinos' farm.
What is the impact of carbonic maceration and the addition of yeast?
Carbonic maceration is an anaerobic fermentation in which the coffee cherries are not pulped. It comes from the wine industry, and these wines are known for being juicy and fruity, which roughly translates to the cup character of coffees fermented in this way. Many in the coffee industry prefer not to use the term "carbonic maceration", and you will commonly see the description of "natural anaerobic" coffees in which the coffee cherry is left intact after part or all of the processing. In any case, in the case of carbonic maceration, the coffee not being pulped, the fermentation process tends to be much longer, because the cherries decompose slowly, and the character of the cup, as we know 'have already indicated, is unique.*
Fermentation with added yeast
Although the vast majority of coffee is fermented using wild indigenous yeasts, Sebastien and Tono Recinos, through trial and error, like two chemists, began experimenting with adding yeasts to their coffee during its fermentation in order to control and manipulate the process. Which adds a nice complexity to this coffee.
Located in the village of Santo Domingo Las Flores, the Recinos family has been growing coffee for five generations.
