About this cafe
Around 600 smallholder farmers supply coffee each year to this washing station in Gedeb, Getachew, particularly known for its high quality production and efficiency. Many come from small family plots growing in the wild and include recently planted trees of improved varieties, as well as heirloom varieties traditional to the region.
Once the cherries are delivered to the washing station, the laborious manual selection of ripe cherries begins. Then, the cherries are dried on thin layers of raised beds to ensure constant fermentation levels for 15 to 25 days. This process requires intense work and impeccable attention to detail to ensure that the flavors are well preserved and stable.
The soil of this particular region is very rich and this, coupled with the processing expertise, contributes to a clean and classic representation of an Ethiopian coffee: udoes not cup with a refined, balanced, soft and complex finish.
